Talking smoothies

I squeezed in a moment on Pinterest this morning in between my shower and getting down to business (a.k.a. school work) and saw so. many. smoothie posts. I love it. Everyone can and will benefit from increasing their daily produce intake - but I have one little bone to pick...most of the recipes I see go into serious fruit overload. Bananas AND orange juice AND strawberries? Way too sweet for me! You are setting yourself up for a serious sugar rush and crash with a combo like this; not exactly how you want to start your day.

Smoothies are a fantastic way to increase your easy-to-digest vegetable intake, not just fruit. And a lot of people find that vegetables do better in combination with other veggies and additional accoutrements (you know, ginger, lemon juice, tahini, a bit of maple syrup), where fruit seems to hold its own...I say, experiment, combine and blend!

Great Smoothie Veggies

- cucumber: so juicy...

- celery: you have no idea...try pairing this one with tahini, it'll blow you awaaaay

- spinach: of the nutrient-dense leafy greens, this one is the easiest on the tummy in its raw form

- parsley: perfect with lemon juice! 

- carrots: you need a high powered blender for this one (e.g. a Vitamix), but carrots are surprisingly sweet

Spinach Ginger Spring Smoothie 

1-2 stalks of full leaf organic spinach, washed

handful of parsley

1/2 lemon's worth of juice

1 small organic apple (or 1/2 a large one)

thumb-size piece of peeled ginger (or less...or more! choose your own adventure)

optional - 1/2 tsp of your favourite sea veg (this morning I used E3Live)

some filtered water (to your desired consistency)

Blend and drink right away!
